Pecan Chocolate Chip Pumpkin Bread

I absolutely adore anything pumpkin, so get ready for all the pumpkin recipes this fall because I have many in mind!


Pecan Chocolate Chip Pumpkin Bread:
Wet Ingredients:
3 pasture raised eggs
1 cup of pumpkin purée
1 overripe mashed banana
1/3 cup of creamy all natural peanut butter
2-3 tbsp of organic maple syrup
Dry Ingredients:
1/2 cup of blanched almond flour
1 tsp of baking powder
1 cup of dairy free dark chocolate chips
1/2-1 cup of chopped pecans
1 tsp of sea salt + more for topping off
Instructions:
1. Preheat your oven to 350 degrees.
2. Whisk all wet ingredients in a bowl until well combined. Add in the dry ingredients and fold in the chocolate chips and pecans.
3. Pour the batter into a bread pan with parchment paper and sprinkle more chocolate chips and pecans if desired. (Who wouldn’t??)
4. Bake in the oven for 30-40 minutes.
5. Allow to cool before slicing, and enjoy!
