Lemon Garlic Salmon Bowl

Lemon Garlic Salmon Bowl:



Ingredients:


Serves 1:


1 wild caught sockeye salmon fillet

1 cup of brocoli florets

1 cup of cauliflower florets

1/2 cup of butternut squash cubes

1/2 cup of acorn squash

1/4 cup of cherry tomatoes

Handful of microgreens

Baby spinach

2 tsp of sea salt

1 tsp of black pepper

1 lemon zest

1 tsp of ground garlic


Instructions:


1. Boil water in a boiler, and add in the brocoli and cauliflower until mildy soft.

2. In a skillet heat coconut oil, and add in the brocoli, cauliflower, butternut squash, and acorn squash. Cover with a lid. Stiring until your desired roast is done.

3. Set the oven on broil, while you prepare the salmon.

4. On a baking sheet line a pan with parchment paper, and lay the salmon.

5. Coat in each of the seasonings, including the lemon.

6. Broil for 10 minutes, or until crisp.

7. Add everything into a bowl on a bed of baby spinach, and enjoy!
